The Aji Amarillo chiles ripen slowly from green to orange. The peppers can get over 6 inches in length and over an inch wide. They have a nice fruity flavor and good heat. The heat is close to a Cayenne pepper. They are often found dried in the Peruvian market but are great for grilling and stuffing since they are so large.
